This 8.5" (216mm) Chef knife is made from 26C3 high carbon steel and hardened using a differential heat treating method, and tempered to 62-64 HRC.
The handle is made of beautiful Desert Ironwood from Arizona, lined with a red G10 liner and finished with matching red G10 pins. An additional layer of hardened wax for additional grip along with providing protection during normal use and abuse.
