The centerpiece of any Chef, line cook or home cook is his Chef Knife. The versatility of this knife is it's primary strength - from taking down large to small vegetables, mincing fresh herbs or prepping meats - this knife will encompass the widest array of use throughout the necessary kitchen tasks.

My Chef knives come in two models: the 8" (200mm) and the 10" (250mm).

The knives are designed to reward a pinch grip. The 8" Chef design is balanced just in front of the handle, and the maximum blade height is located directly underneath the pinch area.
