This 8" (200mm) high carbon steel Usuba kitchen knife is balanced a bit forward from a pinch grip due to the extra steel in the front f the square blade. The blade's cutting edge is designed for downward slicing or 'chopping' style cuts. This is a knife that excels at taking down large and leafy vegetables. From cabbage to carrots, onions to large egg plants this knife will take these down with ease.
Both the spine and heel have been rounded off and sanded smooth for comfortable handling.
The blade is made from 1080 high carbon steel - a great steel for it's high strength, great edge retaining and easy sharpening. The steel is tempered to 61-63 HRC.
The handle is made of Ironwood and is complemented with yellow G10 liners and brass pins. The Ironwood matching scales have a beautiful pattern with different shades of color. Ironwood is the strongest and most dense wood in the Americas and is a perfect species for knife handles. This particular wood was sourced from Arizona.
An additional layer of hardened wax is added to the handle for additional grip along with providing protection during normal use.
