Here's a 5.5" (140mm) Petty knife with the perfect shape for high precision cuts and prep work for everything from vegetables to meats and fish/crustaceans.
The blade is made from 15n20 high carbon steel - a perfect steel for it's high strength, great edge retaining and easy sharpening. The steel is tempered to 61-63 HRC hardness.
The handle is made of Avocado wood with complementing red G10 liners and pins that elevate the grains and colors in he wood.
An Instrument grade Tung oil finish and an final layer of hardened bees wax for additional grip and protection of the handle during normal day to day kitchen use.
